Aloo Baingan Ki Sukhi Sabzi Recipe


Aloo Baingan
  • 2 medium Baingan cut into cubes
  • 1 big Onion finely chopped
  • 2 large Potatoes cut in cubes
  • 2 big Tomatoes cut into big chunks
  • 1 tsp Cumin Seeds (Jeera)
  • 4 tbsp Ghee or Oil
  • 1 Inch Ginger finely chopped
  • 2 – 3 Green Chillies chopped
  • 3 – 4 Garlic Cloves Chopped
  • 1 tsp Coriander Powder
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • salt to taste
  • 1/2 tsp Garam masala
  • 3 tbsp Fresh coriander, chopped
  • 1 tbsp Lemon juice

How to make aloo baingan ki sukhi sabji:

  1. In a kadai heat ghee. When hot, add cumin seeds. When they sputter add onion, ginger- garlic chopped and fry fry for 5 minutes or till they onion is pink and translucent.
  2. Then add coriander powder, garam masala, haldi powder, red chilli powder, green chillies and choppedtomatoes.
  3. Mix well and saute for 2 – 3 minutes till the tomatoes become soft.
  4. Now add diced potatoes and salt. Cook till the potatoes are half done.
  5. Then add cubed baingan, cover and cook till done. Stir occasionally to prevent burning.
  6. When done sprinkle chopped green coriander and a dash of lemon juice.
